My question is - The pedal can use a lot of dynamic range; more maybe than my little semi-pro outfit can handle. The quiet parts can be down in the noise, and the loudest parts can clip if you have the average signal too high. What advice to player and engineer?

My advice is convince the engineer it's worth the extra time to make sure you get a good headphone mix. This will allow you to control the dynamics naturally, and without being too quiet or loud in the context of the music.
This will also save him or her a lot of time riding the fader or overcompressing the channel during the mix.
