I've been using the mandolin a bit to accompany a standard or capo'd up guitar on my recordings.

A more common approach might be to use the so called Nashville tuning on a standard 6 string guitar. I've been learning a lot of really cool jazz chord sequences from "Justin Guitar" on YouTube. Here's a really nice intro from Justin on the use of the Nashville tuning for recording:
