Either is very pretty.
Any of the fancy grained woods are very unstable and would be better as a veneer for looks, But with Straight Grain Hard maple for strength as the body.
I have built 6 full stock muzzle loading rifles with Curly/Tiger/Flame maple. The wood would crawl up and down the barrel by humidity. I could only work on them in the winter in the basement when the furnace was on to keep humidity stable enough to work on. Then a very good finish that was waterproof.
