Are the pots in Peavey amps, and most other amps for that matter, carbon pots?

Yes they are. It is not possible to get the high resistance (100k-500k) with wirewound pots.

Other than wirewound, there are the conductive plastic types which can have the same high values. The Peavey carbon types seem real rugged and easily cleanable.
