For this example I'm thinking of a G7 with fret-3 being the Open-G position and fret-10 being the AB-down G-cord position...
On a side note... 7th-Pockets are one of applications where the S12U "One Big Tuning" method really shines.

Open position using your D-notes (or D-note Levers).
AB-down position but with your G#-Strings lowered to G by whatever method.
Three frets up from open with the E-to-F-Lever.
Two frets back from open with your B-to-Bb-Lever.
Two frets back from the AB position with E's lowered and the B-pedal.
One fret up from the AB position with E's lowered and B's raised to C (the F# strings become the 7ths) [P8].
Three frets up from Open position with E's lowered and F#('s) lowered to F [P5].
Open position with E's lowered using P6.
Two frets back from Open with E's lowered and P6+P7.
I'm sure there are many others.
Two frets back from open with the A-pedal can be used as a 7th.
There must be a ton of them.

You can increase your mileage by vertically arppegiating your way across the strings at each position, then slide up/down horizontally to other fret positions.

Of course all of these have a 12-frets-up position.
Some of them occur at the same fret, like three frets up from open with the F-lever, and 3 frets up from open with E's-lowered and P5. Also two frets back from open with B's-to-Bb, and two frets back from open with P7 (or E's lowered with P6+P7).

If you need a background track to jam to, there are alot of Grateful Dead songs on Youtube that have long 7th chord jams in the middle, Truckin' from Europe 72 comes to mind.

Don't overlook (to keep Pete's G7 location in mind) fret 8 with Es lowered. You can start with pedals up for G6, adding B pedal to make it 7, squeezing the A pedal to take root to 9.
Also fret 1/13, with the A# lever pulling the fifth string 4 tone down to 3 (and, as I prefer scales to arpeggii, the 2nd string drop to C#¹ dropping a 6 to a 5)

¹One more reason not to put the E lowers on the same lever as the 2 drop.
